Cherry Hand Pies

Delightful hand pies filled with sweet, juicy cherries, evoking memories of summer and homemade goodness.

Ingredients

  • 2 cups of fresh or frozen cherries, pitted
  • 1/2 cup of sugar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of cornstarch
  • 1 teaspoon of vanilla extract
  • 1 package of pie crusts (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 tablespoon of milk (for egg wash)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine cherries, sugar, lemon juice, cornstarch, and vanilla in a medium saucepan. Cook over medium heat until bubbly and slightly thickened, about 5-7 minutes. Remove from heat and let cool.
  3. Roll out the pie crusts and cut into circles about 5 inches in diameter.
  4. Place a spoonful of the cherry filling on one half of each circle.
  5. Fold the dough over the filling and press the edges to seal. Crimp the edges with a fork.
  6. Whisk together the egg and milk in a small bowl. Brush this mixture over the top of each pie.
  7. Place the hand pies on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
  8. Let cool slightly before serving. Dust with powdered sugar if desired.

Notes

Serve warm with vanilla ice cream or whipped cream. These pies can be stored in an airtight container in the fridge for up to 3 days.
