A delightful rustic dessert featuring tart cherries wrapped in a buttery, flaky crust.

Ingredients

  • 2 cups fresh cherries, pitted
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the all-purpose flour, sugar, and salt. Cut in the butter until crumbly.
  3. Stir in the ice water and lemon juice until the dough comes together.
  4. Roll out the dough into a 12-inch circle.
  5. Place the pitted cherries in the center of the dough. Sprinkle with sugar if desired.
  6. Fold the dough edges over the filling, leaving the center exposed.
  7. Brush the edges with beaten egg for a golden finish.
  8. Bake for 25-30 minutes until golden brown and bubbling.
  9. Cool for a few minutes before serving.

Notes

Perfect with vanilla ice cream or fresh whipped cream. Store leftovers covered for up to 2 days at room temperature.
