A soft, moist cake studded with juicy cherries and topped with a crunchy almond crust, perfect for family gatherings and special occasions.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the sugar and butter until light and fluffy.
  3. Beat in the eggs one at a time, incorporating fully.
  4. Stir in the vanilla and almond extracts.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually mix the dry ingredients into the wet mixture, alternating with the sour cream until just combined.
  7. Fold in the halved cherries and half of the sliced almonds.
  8. Pour the batter into the prepared cake pan, smoothing the top.
  9. Sprinkle the remaining sliced almonds on top.
  10. Bake for 30-35 minutes until a toothpick comes out clean.
  11. Allow to cool before transferring to a wire rack.

Notes

Serve with fresh fruit or whipped cream, and store leftovers in an airtight container.
