  • 500g puff pastry
  • 200g mature cheddar cheese, grated
  • 100g cream cheese
  • 2 large onions, finely chopped
  • 2 tablespoons butter
  • 1 large egg, beaten
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Sauté the onions in melted butter until soft and translucent, about 8-10 minutes.
  3. Combine the mature cheddar cheese, cream cheese, and sautéed onions, seasoning with salt and pepper.
  4. Prepare the puff pastry by rolling it out and lining your pie dish with half of it.
  5. Fill the pastry with the cheese and onion mixture, spreading it evenly.
  6. Assemble the top crust with the remaining puff pastry, sealing the edges tightly.
  7. Egg wash the top with the beaten egg for a golden finish.
  8. Bake in the oven for 30-35 minutes until golden brown.
  9. Rest the pie for a few minutes before slicing.

Notes

For added flavor, consider incorporating herbs like thyme or a pinch of chili flakes. This pie can be prepared in advance and stored in the fridge or freezer.
