Cheddar Oven Baked Potato Skins

Crispy potato skins filled with rich cheddar cheese, smoky bacon, and fresh green onions, perfect for a cozy gathering.

Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the russet potatoes under cold water, scrubbing off any dirt. Prick each potato multiple times with a fork.
  3. Place the potatoes directly on the oven rack and bake for about 45 minutes, or until soft and tender.
  4. Allow the potatoes to cool for a few minutes. Cut each potato in half lengthwise, and scoop out the insides, leaving a small border.
  5. Brush each potato half with olive oil and sprinkle with salt and pepper.
  6. Return the potato skins to the oven for another 10 minutes until crispy.
  7. Remove the potato skins and fill them with shredded cheddar cheese and crumbled bacon.
  8. Pop them back in the oven for 5-7 minutes until the cheese melts and bubbles.
  9. Sprinkle with fresh chopped green onions and serve hot!

Notes

For a healthier version, consider using olive oil spray instead of brushing with oil. These potato skins can also be made vegetarian by replacing bacon with vegetables.
