Ingredients

Scale
  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1 teaspoon smoked paprika
  • Fresh herbs (like thyme or rosemary) for garnish

  2. Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, garlic powder, and smoked paprika.
  3. Heat the olive oil in a cast iron skillet over medium-high heat.
  4. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  5. Flip the chicken thighs over carefully and transfer the skillet to the oven.
  6. Bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).

Notes

Pat the chicken dry for a crispy skin and avoid overcrowding the skillet for optimal searing.
