A moist and tender carrot layer cake filled with fluffy cream cheese frosting, perfect for celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 large eggs
  • 1 cup vegetable oil
  • 4 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Mix together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. Whisk the eggs and vegetable oil together in another bowl, then stir in grated carrots, crushed pineapple, and walnuts (if using).
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Divide the batter evenly among the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool completely in the pans before moving them to a wire rack.
  8. Beat together the cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  9. Layer the cakes with cream cheese frosting in between and on top, decorating as desired.

Notes

For best results, ensure the cake layers cool completely before frosting. This will prevent the frosting from melting.
