A delightful blend of traditional carrot cake and creamy cheesecake, perfectly spiced and topped with optional cream cheese frosting.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting for topping (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the crust by mixing graham cracker crumbs with melted butter.
  3. Press the mixture into a greased 9-inch springform pan.
  4. Cream the softened cream cheese and granulated sugar in a large bowl.
  5. Add the eggs one at a time, mixing thoroughly.
  6. Mix in vanilla extract, grated carrots, cinnamon, nutmeg, baking powder, and walnuts.
  7. Pour the mixture over the crust in the springform pan.
  8. Bake for 60-70 minutes until the center is set but slightly jiggly.
  9. Cool the cheesecake in the oven for 1 hour.
  10. Chill the cheesecake in the refrigerator for at least 4 hours.
  11. Top with cream cheese frosting if desired before serving.
