A rich, velvety Caramel Brownie Cheesecake combining fudgy brownie base and creamy cheesecake topped with caramel and chocolate chips.

Ingredients

  • 1 box brownie mix
  • 2 tablespoons water
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup caramel sauce
  • 1 cup chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Combine the brownie mix with water, oil, and two eggs in a mixing bowl. Stir until just blended, then pour into the prepared springform pan.
  3. Beat the cream cheese until smooth in a separate bowl. Add granulated sugar and vanilla extract, mixing well. Incorporate the three eggs one at a time.
  4. Pour the cheesecake mixture over the brownie base.
  5. Drizzle caramel sauce over the cheesecake layer, then sprinkle with chocolate chips.
  6. Swirl the caramel into the cheesecake layer with a knife.
  7. Bake for 50-60 minutes, or until the cheesecake is set in the middle.
  8. Cool at room temperature, then refrigerate for at least 4 hours or overnight.

Notes

Make sure cream cheese is at room temperature. Don’t skip the chilling step.
