A delightful twist on the classic Caprese salad featuring succulent chicken breasts topped with melted mozzarella, cherry tomatoes, and fresh basil.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Sear the chicken in a large oven-safe skillet with olive oil, about 5 minutes on each side.
  4. Add the halved cherry tomatoes around the chicken.
  5. Top with slices of fresh mozzarella on each chicken breast.
  6. Drizzle the balsamic vinegar over the chicken and tomatoes.
  7. Bake in the preheated oven for 20-25 minutes or until cooked through.
  8. Serve hot, garnished with additional fresh basil.

Notes

Pairs well with garlic bread or a fresh salad. Leftovers can be stored in the refrigerator for up to 3 days.
