A delightful twist on the classic Caprese salad, transforming it into a heartwarming main course with juicy chicken, fresh tomatoes, mozzarella, and basil.

Ingredients

  • 2 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella cheese, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sear the chicken breasts for about 5 minutes on each side until golden brown.
  5. Remove</strong from heat and top each chicken breast with cherry tomatoes, mozzarella cheese, and basil.
  6. Drizzle with balsamic glaze.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Serve warm and enjoy!
