Delightful cookies that capture the flavor of classic cannoli with a tender texture and bursts of flavor from chocolate chips.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, powdered sugar, baking powder, and salt until well combined.
  3. Add the cubed, cold butter into the flour mixture.
  4. Combine the ricotta cheese and vanilla extract in a separate bowl.
  5. Pour the ricotta mixture into the flour mixture and stir gently until just blended.
  6. Fold in the mini chocolate chips and chopped pistachios.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the cookies are lightly golden.
  9. Let the cookies cool on a wire rack for a few minutes before serving.

Notes

Serve with vanilla gelato or espresso for an elevated experience. Store leftovers in an airtight container at room temperature for up to five days.
