2 large cucumbers
1 cup imitation crab meat, chopped
1 large avocado, diced
1/4 cup rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
2 stalks green onions, sliced
Sesame seeds for garnish
Instructions
Prepare your ingredients by washing the cucumbers and slicing them in half lengthwise. Scoop out the seeds gently and chop them into bite-sized pieces.
Make the dressing by whisking together rice vinegar, soy sauce, sesame oil, and sugar in a bowl. Adjust taste as desired.
Combine the chopped cucumbers, imitation crab meat, and diced avocado in a large bowl. Pour the dressing over and gently toss to coat.
Garnish with sliced green onions and sesame seeds. Serve immediately or chill for 10-15 minutes before serving.
