Ingredients

  • 8 ounces fettuccine pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions. Once al dente, drain and set aside.
  2. Toss the shrimp with Cajun seasoning in a large bowl to ensure they are well-coated.
  3. Heat olive oil in a large skillet over medium heat. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove from skillet and set aside.
  4. Add sliced bell peppers, diced onion, and minced garlic to the skillet. Sauté until soft and fragrant, about 5 minutes.
  5. Stir in the heavy cream and bring to a simmer.
  6. Add grated Parmesan cheese and stir until melted and creamy.
  7. Return the shrimp to the skillet and toss to combine.
  8. Add the cooked fettuccine to the skillet and mix well, season with salt and pepper to taste.
  9. Garnish with chopped parsley before serving.

Notes

To avoid overcooking the shrimp, remove them from heat as soon as they turn pink. Adjust Cajun seasoning to taste, adding smoked paprika for flavor.
