  • 1 lb chicken thighs, cut into pieces
  • 1 lb andouille sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 cups okra, sliced
  • 3 tablespoons Cajun seasoning
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Cooked rice for serving
  • Chopped green onions for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat, then add the chicken and sausage, cooking until browned.
  2. Mix in the onion, bell pepper, celery, and garlic, cooking until they have softened.
  3. Combine the diced tomatoes, chicken broth, sliced okra, Cajun seasoning, bay leaves, salt, and pepper to the pot.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 45 minutes, stirring occasionally.
  5. Remove the bay leaves and adjust seasoning if necessary.
  6. Serve your gumbo hot over a bed of cooked rice, garnished with chopped green onions.

Notes

Gumbo pairs wonderfully with crusty French bread or a light side salad. Leftovers can be stored in the refrigerator for up to 3-4 days, or frozen for up to 3 months.
