  • 2 tablespoons Cajun seasoning
  • 8 oz pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Begin by cooking the pasta according to the package instructions. Once done, drain it and set aside.
  2. Season the Chicken: Sprinkle the Cajun seasoning generously over the chicken breasts, ensuring they’re well-coated.
  3. Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side. Remove from skillet and let rest.
  4. Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion along with the minced garlic. Sauté until softened, about 4-5 minutes.
  5. Create the Creamy Sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted.
  6. Combine Everything: Add the cooked pasta and sliced chicken back into the skillet. Toss to combine and season with salt and pepper.
  7. Garnish and Serve: Garnish with fresh parsley and serve immediately.

Notes

For a lighter option, substitute heavy cream with half-and-half. Add sautéed mushrooms for extra flavor.
