Deliciously sweet Butterscotch Blondies, perfect for a comforting treat on a chilly day.

  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the unsalted butter in a large saucepan over medium heat, then stir in the brown sugar until smooth.
  3. Cool the mixture slightly, then add the eggs and vanilla extract, stirring until smooth and glossy.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the flour mixture to the butter and sugar mixture, stirring gently until just combined.
  6. Fold in the butterscotch chips until evenly distributed.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan, then cut into squares and serve.
