A hearty and flavorful dish combining butter beans and diced tomatoes with aromatic spices.

Ingredients

  • 1 can butter beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cooking until softened.
  2. Add in the smoked paprika and ground cumin, cooking for another minute.
  3. Combine diced tomatoes and the drained butter beans to the skillet.
  4. Season with salt and pepper, tasting and adjusting as you go.
  5. Let it simmer for about 15 minutes, allowing the flavors to meld together beautifully.
  6. Serve warm, garnished with fresh parsley.
