  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Sprinkle in the smoked paprika and cumin, mixing well.
  5. Pour in the diced tomatoes and bring to a simmer.
  6. Add the drained butter beans and stir gently.
  7. Season with salt and pepper to taste.
  8. Let it simmer for about 15 minutes, stirring occasionally.
  9. Garnish with fresh parsley before serving.
