A flavorful twist on a classic dish, these Buffalo Chicken Stuffed Peppers combine creamy buffalo chicken filling with tender bell peppers for a delightful meal that’s perfect for gatherings or weeknight dinners.

  • 4 large bell peppers
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds inside.
  3. Combine the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, green onions, and season with salt and pepper.
  4. Stuff each bell pepper with the chicken mixture.
  5. Arrange the stuffed peppers in a baking dish, topping with remaining cheddar cheese.
  6. Bake for 25-30 minutes, or until the peppers are tender and cheese is bubbly.
  7. Serve hot, optionally garnished with extra green onions.

Notes

These stuffed peppers can be made ahead of time and stored in the refrigerator. They also freeze well for up to 3 months.
