Crispy egg rolls filled with a spicy and creamy Buffalo chicken mixture, perfect for gatherings or game day.

Ingredients

  • Egg roll wrappers
  • Cooked chicken, shredded
  • Hot sauce
  • Cream cheese, softened
  • Shredded cheese (cheddar or a blend)
  • Green onions, sliced
  • Oil for frying

Instructions

  1. Combine the filling: In a large bowl, mix together shredded cooked chicken, hot sauce, softened cream cheese, shredded cheese, and the sliced green onions. Stir until well combined.
  2. Place an egg roll wrapper on a clean, flat surface with one corner pointing toward you.
  3. Spoon a generous amount of the chicken mixture into the center of the wrapper.
  4. Fold the bottom corner of the egg roll wrapper over the filling, pulling it tightly. Then, fold in the sides and roll it up to form a sealed log.
  5. Heat oil in a skillet over medium-high heat. Carefully place the egg rolls into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the egg rolls from the oil and drain on paper towels. Serve hot with your choice of ranch or blue cheese dressing.
