Instructions

  1. Sautéing the Aromatics: In a large pot, melt the butter over medium heat. Once the butter starts bubbling, add the chopped onions and minced garlic. Sauté until the onions become translucent and soft, about 3-4 minutes.

  3. Whisking in the Liquids: Gradually whisk in the vegetable broth and milk, cooking until the mixture is thickened and smooth.
  4. Simmering the Broccoli: Add the chopped broccoli along with salt and pepper to taste. Allow the soup to simmer until the broccoli is tender, about 5-7 minutes.
  5. Melting the Cheese: Once the broccoli is tender, stir in the shredded cheddar cheese until it melts into the soup.
