Savory breakfast burritos packed with eggs, sausage, and cheese, perfect for a crowd.

Ingredients

  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked breakfast sausage or bacon, crumbled
  • 1 medium bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup cooked and diced potatoes or hash browns
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Salsa or hot sauce (optional)

Instructions

  1. Sauté the Vegetables in a skillet over medium heat until soft, about 5 minutes.
  2. Whisk the eggs with salt and pepper in a bowl.
  3. Scramble the eggs in the skillet with the sautéed veggies until fully cooked, about 3-4 minutes.
  4. Mix in the crumbled sausage, shredded cheese, and cooked potatoes; stir until combined.
  5. Assemble the Burritos by placing an equal amount of the egg mixture on each tortilla and rolling them up.
  6. Serve warm with salsa or hot sauce if desired.
