8 oz bowtie pasta
2 cups broccoli florets
2 breasts chicken, cooked and diced
4 tbsp butter
3 cloves garlic, minced
1 lemon, juiced and zested
Salt and pepper to taste
Parmesan cheese for serving (optional)
Instructions
Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Add your bowtie pasta and cook according to package directions until al dente, about 7-8 minutes. Add broccoli florets during the last 3 minutes. Drain, keeping a cup of pasta water.
Prepare the Cowboy Butter Sauce: In a skillet over medium heat, melt the butter. Add minced garlic and cook for about a minute. Remove from heat, stir in lemon juice and zest, and season with salt and pepper.
Combine the Ingredients: Return the skillet to medium heat and toss in pasta, broccoli, and diced chicken. Stir to coat everything in the sauce, adding more pasta water for desired consistency.
Serve Warm and Sprinkle: Serve on plates warm, sprinkle with freshly grated Parmesan cheese if desired.
