A decadent cheesecake that combines the richness of chocolate, smoothness of cheesecake, and the nostalgia of Boston Cream Pie.

Ingredients

  • 1 ½ cups chocolate cookie crust
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup heavy cream
  • 3 large eggs
  • ¼ cup cocoa powder
  • 1 cup chocolate ganache
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 325°F (162°C). Grease a springform pan.
  2. Crush the chocolate cookies into fine crumbs and mix with melted butter, pressing it into the pan. Bake for 10 minutes, then let cool.
  3. Beat the cream cheese until smooth. Add sugar and vanilla, mixing well.
  4. Add the eggs one at a time, mixing on low speed until incorporated.
  5. Divide the mixture and add cocoa powder to one half.
  6. Pour the vanilla mixture over the cooled crust, then spoon the chocolate layer on top.
  7. Bake for 50-60 minutes until set with a slight jiggle in the center. Let cool to room temperature, then chill for at least 4 hours.
  8. Melt chocolate and heavy cream to make ganache, then let cool and pour over the chilled cheesecake.
  9. Garnish with chocolate chips and serve.

Notes

For a richer chocolate flavor, add more cocoa powder. Use room temperature cream cheese for best results.
