A quick and nutritious breakfast option that is prepared the night before with rolled oats, Greek yogurt, and fresh blueberries.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or non-dairy milk)
  • 1/2 cup Greek yogurt (or non-dairy yogurt)
  • 1 cup blueberries
  • 2 tablespoons honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the rolled oats, milk, Greek yogurt, honey, vanilla extract, and salt in a jar or bowl.
  2. Fold in the blueberries gently.
  3. Chill overnight or for at least 4 hours in the refrigerator.
  4. Stir the mixture in the morning, adding more milk if necessary, and enjoy cold or warm.

Notes

Store in an airtight container in the fridge for up to 3 days. Use rolled oats for the best texture.
