Delicious and easy blueberry muffins that are perfect for breakfast or snacks.

Ingredients

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the blueberries gently.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for 2-3 days or frozen for up to 3 months.
