Delicious, soft blueberry muffins that evoke comfort and nostalgia, perfect for breakfast or snacks.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s nice and hot when you’re ready to bake!
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. In another bowl, melt the unsalted butter and allow it to cool slightly. Then add in the eggs, milk, and vanilla extract. Whisk until smooth and creamy.
  4. Pour the wet mixture into the bowl with the dry ingredients. Mix gently until just combined—don’t worry if a few lumps remain.
  5. Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.
  6. Line a muffin tin with paper liners, and using a spoon or ice cream scoop, fill each muffin cup about 2/3 full with the batter.
  7. Place the muffin tin in the preheated oven and bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let the muffins cool for a few minutes in the tin, then transfer them to a wire rack or serve warm.

Notes

For best mixing results, make sure your ingredients are at room temperature. If using frozen blueberries, toss them in a bit of flour before folding them into the batter.
