Delicious blueberry muffins bursting with flavor, perfect for breakfast or as a snack.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. Mix the buttermilk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredient mixture into the dry ingredients and mix gently until just combined.
  5. Fold in the fresh blueberries.
  6. Divide the batter among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool slightly before serving.

Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
