Deliciously soft and chewy blondies bursting with fresh blueberries and zesty lemon flavor.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix together the melted butter and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. Whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Fold in the blueberries, lemon zest, and lemon juice until evenly distributed.
  6. Pour the batter into the prepared baking pan, smoothing it out evenly.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow to cool before slicing into bars and serving.

Notes

Dust blueberries with flour to prevent sinking. For a vegan version, substitute eggs with flax eggs and use vegan butter.
