  • 2 cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix the melted butter and brown sugar together until well combined.
  3. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the blueberries, lemon zest, and lemon juice gently.
  7. Pour the batter into the prepared baking pan and spread it evenly.
