A rustic Blueberry Galette that combines the sweetness of fresh blueberries with a flaky pie crust, perfect for any gathering.

Ingredients

  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon butter (to dot)
  • Optional: 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the fresh blueberries, granulated sugar, lemon juice, cornstarch, and salt.
  3. Roll out the pre-made pie crust on a baking sheet.
  4. Spoon the blueberry mixture onto the center of the rolled-out crust, leaving a 2-inch border around the edges.
  5. Fold the edges of the crust over the berries to create a border.
  6. Brush the crust with an egg wash and dot the filling with butter.
  7. Sprinkle coarse sugar over the crust if desired.
  8. Bake for 25-30 minutes or until the crust is golden brown.
  9. Let the galette cool slightly before serving.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream.
