A rustic blueberry galette with a flaky crust, bursting with fresh blueberries and perfect for summer gatherings.

  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon butter (for dotting)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine fresh blueberries, sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt in a mixing bowl.
  3. Lay out a pre-made pie crust onto a baking sheet lined with parchment paper.
  4. Spoon the blueberry mixture onto the center of the pie crust, leaving a border around the edges.
  5. Fold the edges of the crust over the filling, creating a rustic look.
  6. Whisk together 1 egg and brush it on the crust; dot filling with butter.
  7. Bake for 30-35 minutes, or until golden brown and filling is bubbly.
  8. Cool before slicing and serving.
