Delicious and fluffy blueberry cupcakes topped with creamy cream cheese frosting, perfect for any celebration.

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • Cream cheese frosting (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Creaming together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the creamed mixture, alternating with the milk.
  6. Fold in the fresh blueberries.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow cooling before frosting with cream cheese frosting.

Notes

Store leftover cupcakes in an airtight container at room temperature for up to 3 days. They can also be frozen for up to three months—just be sure to frost them after thawing!
