Delicious blueberry cream cheese bars with a chewy oat crust, perfect for summer gatherings.

Ingredients

  • 1 cup oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1 cup cream cheese
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups blueberries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish to help with easy removal later.
  2. Create the oat crust by mixing oats, flour, brown sugar, and melted butter until blended, then press half into the bottom of the dish.
  3. Prepare the cream cheese filling by beating cream cheese, sugar, egg, and vanilla until smooth. Fold in blueberries and lemon juice.
  4. Assemble the layers by pouring the filling over the oat crust and sprinkle the remaining oat mixture on top.
  5. Bake in the preheated oven for 30-35 minutes until golden and set.
  6. Cool completely in the dish before cutting into squares.

Notes

These bars are excellent with a dusting of powdered sugar or a dollop of whipped cream. Store leftovers in an airtight container for up to 5 days.
