A creamy, decadent cheesecake swirled with luscious blueberries that create a heavenly balance of flavors.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan to create a solid crust.
  4. Beat together the softened cream cheese, 1 cup of sugar, and vanilla extract until smooth and creamy.
  5. Incorporate the eggs one at a time, mixing well after each addition.
  6. Fold in the sour cream and gently mix in the blueberries.
  7. Pour the creamy mixture over the crust in the springform pan and smooth the top.
  8. Bake for about 55-60 minutes, until the center is set but slightly jiggly.
  9. Cool at room temperature then chill in the refrigerator for at least 4 hours before serving.

Notes

For a fresh twist, serve with whipped cream or a scoop of vanilla ice cream.
