  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh blueberries
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish to prevent sticking.
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press this mixture into the bottom of the prepared baking dish to form a solid crust.
  3. In another bowl, beat the softened cream cheese, 1/2 cup sugar, and vanilla extract together until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition to ensure a light and airy texture.
  5. Fold in the fresh blueberries that have been tossed with cornstarch. Gently pour the cheesecake mixture over the crust and spread it evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the cheesecake is set but still slightly jiggly in the center.
  7. Allow the bars to cool at room temperature, then refrigerate for at least 2 hours before slicing into bars and serving.
