A delightful and nostalgic blackberry cobbler with a crispy top and juicy blackberry filling.

  • 2 cups fresh blackberries
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the fresh blackberries, 1/2 cup sugar, and lemon juice in a bowl and toss gently.
  3. Whisk together the flour, baking powder, salt, and remaining sugar in another bowl.
  4. Stir in the milk, melted butter, and vanilla extract into the flour mixture.
  5. Pour the batter into a greased baking dish, spreading it evenly.
  6. Add the blackberry mixture over the batter.
  7. Bake for 40-45 minutes, or until the top is golden brown.
  8. Serve warm, optionally with vanilla ice cream.
