A delicious and easy blackberry cobbler that captures the essence of summer with its sweet and tangy flavors.

Ingredients

  • 2 cups fresh blackberries
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the blackberries, 1/2 cup sugar, and lemon juice in a bowl and toss gently.
  3. Whisk together flour, baking powder, salt, and remaining 1/2 cup sugar in another bowl.
  4. Stir in the milk and melted butter until just combined.
  5. Pour the berry mixture into a greased baking dish and then pour the batter over the top.
  6. Bake for 45-50 minutes until golden and bubbly.
  7. Serve warm, optionally with ice cream or whipped cream.

Notes

For best results, use ripe blackberries and avoid overmixing the batter.
