A rich chocolate cake layered with tart cherries and fluffy whipped cream, perfect for celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 ounces) Morello cherries, drained
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and beat for 2 minutes.
  4. Gently stir in the boiling water, then divide the batter evenly between the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool the cakes in the pans for 10 minutes then remove to a wire rack to cool completely.
  7. Slice each cake in half horizontally to create four layers.
  8. Whip the heavy cream with powdered sugar until soft peaks form.
  9. Place the first layer on a serving plate, spread whipped cream, and add a layer of cherries.
  10. Repeat with the next two layers, filling with whipped cream and cherries.
  11. Frost the entire cake with remaining whipped cream.
  12. Decorate with chocolate shavings and serve.
