Flaky biscuits topped with rich, creamy sausage gravy, perfect for breakfast or brunch.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 pound breakfast sausage
  • 2 tablespoons all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C). In a large mixing bowl, combine the flour, baking powder, and salt.
  2. Add the cold, cubed butter to the flour mixture and work until it resembles coarse crumbs.
  3. Stir in the milk until just combined, being careful not to overmix.
  4. Knead the dough on a floured surface just enough to bring it together. Roll out to about 1-inch thickness, then cut with a biscuit cutter.
  5. Place the biscuits on a lined baking sheet, ensuring they’re close but not touching.
  6. Bake for 12-15 minutes or until golden brown.
  7. Heat a skillet over medium heat and add the breakfast sausage, cooking until browned.
  8. Sprinkle the sausage with 2 tablespoons of flour and stir. Gradually add 2 cups of milk, stirring until the gravy thickens. Season with salt and pepper to taste.
  9. Serve the warm biscuits topped with creamy sausage gravy.

Notes

For crispy biscuits, keep your butter cold. Freeze unbaked biscuits for later use.
