Delicious Biscoff Cheesecake Cups featuring a crunchy cookie crust and creamy cheesecake filling.

Ingredients

  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup Biscoff cookie spread
  • 1 cup crushed Biscoff cookies
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Create the crust by combining crushed Biscoff cookies with melted butter in a bowl. Press the mixture into the bottom of serving cups to form the crust.
  2. Beat the cream cheese and powdered sugar in another bowl until smooth.
  3. Blend in the Biscoff cookie spread and vanilla extract to the cream cheese mixture, mixing until combined.
  4. Whip the heavy cream in a separate bowl until stiff peaks form.
  5. Fold the whipped cream into the cream cheese mixture gently until smooth.
  6. Layer the cheesecake mixture over the crust in the cups, spreading evenly.
  7. Chill in the refrigerator for at least 2 hours to set.
  8. Serve chilled, optionally topped with extra crushed Biscoff cookies.

Notes

For a unique twist, try adding a hint of espresso powder to the cream cheese mixture.
