Experience the rich flavors of traditional Birria Tacos filled with tender beef, smoky chilies, and fresh garnishes.

  • 2 lbs beef chuck roast
  • 1 lb beef short ribs
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 4 cups beef broth
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onion and cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Toast the dried chilies in a skillet over medium heat until fragrant.
  3. Blend the toasted chilies with onion, garlic, cumin, oregano, paprika, and a cup of beef broth until smooth.
  4. Combine beef, chili mixture, and remaining beef broth in a large Dutch oven. Season with salt and pepper.
  5. Slow cook in the oven for about 3-4 hours until the meat is tender.
  6. Shred the beef and serve in warmed corn tortillas with garnishes.

Notes

For a milder flavor, adjust the number of chilies. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
