  • 1 lb beef sirloin or tenderloin, cut into cubes
  • 1 bell pepper, cut into squares
  • 1 onion, cut into squares
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. Create the Marinade: In a bowl, mix olive oil, soy sauce, lemon juice, minced garlic, salt, and pepper to create a marinade that will inject your beef with flavor.
  2. Marinate the Beef: Add the beef cubes to the marinade and ensure every piece is coated well. Cover and refrigerate for 1-2 hours.
  3. Preheat the Grill: As the beef is soaking in its flavorful bath, preheat the grill to medium-high heat.
  4. Prepare the Skewers: Thread the marinated beef, bell pepper, onion, and zucchini onto the skewers.
  5. Grill the Kabobs: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally.
  6. Let Them Rest: Once grilled, remove the kabobs and let them rest for a few minutes.

Notes

For a deeper flavor, let the meat marinate longer, ideally overnight. Serve with a refreshing side like cucumber salad or couscous.
