A warm plate of beef enchiladas, filled with seasoned meat and topped with cheese, perfect for family gatherings.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the ground beef, onion, and garlic over medium heat until browned.
  3. Stir in the enchilada sauce, cumin, salt, and pepper, and let simmer.
  4. Fill each tortilla with the beef mixture, sprinkle with cheese, roll, and place seam side down.
  5. Pour any remaining sauce over the tortillas and top with more cheese.
  6. Bake for 20-25 minutes until cheese is bubbly and golden.
  7. Garnish with chopped cilantro and serve hot.

Notes

For a spicy kick, add diced jalapeños to the filling or use a hot enchilada sauce.
