Delicious Beef Burrito Bowls filled with seasoned beef, vibrant veggies, and customizable toppings for a wholesome meal.

Ingredients

  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat until nicely browned, breaking it up with a spatula.
  2. Season the beef with chili powder, cumin, salt, and pepper, stirring well to coat.
  3. Layer a generous base of cooked rice in each serving bowl.
  4. Add the seasoned beef, black beans, corn, and diced tomatoes on top of the rice.
  5. Top with diced avocado, shredded cheese, and a dollop of sour cream if desired.
  6. Garnish with fresh cilantro for added flavor and color.

Notes

For a vegetarian version, substitute beef with black beans, lentils, or sautéed mushrooms.
