A delicious BBQ Chicken Quinoa Bowl that combines grilled chicken, fluffy quinoa, and protein-packed black beans, celebrating summer flavors.

Ingredients

  • 1½ lbs chicken breast
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • ½ cup BBQ sauce
  • 1 cup dry quinoa (cooked per package)
  • 1 cup black beans, rinsed & drained

Instructions

  1. Preheat your grill or skillet over medium heat. Season the chicken breast with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Place the seasoned chicken on the grill or skillet. Cook for about 6-7 minutes on each side or until done, brushing with BBQ sauce during the last few minutes.
  3. While the chicken is grilling, cook the quinoa according to package instructions.
  4. Once cooked, combine the quinoa with rinsed black beans and additional BBQ sauce if desired.
  5. Slice the grilled chicken into strips and serve it over the quinoa and black bean mixture.

Notes

For extra flavor, marinate the chicken in BBQ sauce for a few hours before grilling. Leftovers can be stored in an airtight container for about 3 days.
