  • 2 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 cup beef broth
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings (cilantro, diced onion, lime wedges)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned.
  2. Remove the roast and add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
  3. Combine the chipotle pepper, cumin, oregano, smoked paprika, beef broth, lime juice, salt, and pepper in a blender. Blend until smooth.
  4. Return the seared beef to the pot and pour the blended mixture over it.
  5. Cover and simmer on low heat for about 4-5 hours until the beef becomes tender.
  6. Shred the beef with two forks and mix it back into the sauce.
  7. Serve in warm corn tortillas topped with fresh cilantro, diced onion, and juicy lime wedges.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. For best results, reheat gently.
