A flavorful Barbacoa Beef recipe featuring fork-tender meat marinated in a zestful blend of spices, perfect for tacos, burritos, or over rice.

Ingredients

Scale
  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lime juice
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 12 chipotle peppers in adobo sauce (optional)
  • Beef broth if needed

Instructions

  1. Blend your marinade: In a blender, combine onion, garlic, apple cider vinegar, lime juice, cumin, oregano, paprika, black pepper, salt, and chipotle peppers. Blend until smooth.
  2. Prepare the beef: Place the beef chuck roast in a slow cooker and pour the blended mixture over the beef, ensuring it’s well-coated.
  3. Slow cook the beef: Cook on low for 8 hours or until the beef is tender and shreds easily.
  4. Shred the beef: Once cooked, use two forks to shred the beef directly in the slow cooker and mix well with the juices.
  5. Serve it up: Serve in tacos, burritos, or on rice with your favorite toppings.

Notes

For added flavor, consider searing the beef before slow cooking. Adjust chipotle peppers for desired heat.
