  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (optional)
  • Green onions for garnish

Instructions

  1. Prepare the Coating Mixture: In a bowl, mix together the flour, cornstarch, salt, and pepper.
  2. Dip in Buttermilk: Take each shrimp and dip it into the buttermilk, ensuring it’s well-coated.
  3. Dredge in Flour Mixture: Dredge the buttermilk-coated shrimp in the flour mixture.
  4. Coat with Panko Breadcrumbs: Transfer the shrimp to the panko breadcrumbs, pressing gently.
  5. Heat the Oil: In a frying pan, heat vegetable oil over medium-high heat until it shimmers.
  6. Fry the Shrimp: Carefully place the shrimp in the hot oil, frying them for about 2-3 minutes on each side.
  7. Prepare the Sauce: In a separate bowl, combine mayonnaise, sweet chili sauce, and Sriracha (if using).
  8. Toss and Serve: Once the shrimp are fried, toss them in the sauce until fully coated and garnish with green onions.

Notes

For an even crunchier texture, consider using garlic powder or paprika in the flour mixture. Leftovers can be stored in an airtight container for 1-2 days.
